Apricot-Ricotta Cheese Dessert

  1. 1-15 oz. can apricots
  2. 1-15 oz. container ricotta cheese
  3. 1/2 cup powdered sugar
  4. grated rind of one orange
  5. 1/2 teaspoon almond extract
  6. 1/2 teaspoon vanilla extract
  1. Drain and rinse apricots and cut up with kitchen shears or knife.
  2. Combine remaining ingredients in a large bowl and stir well to mix.
  3. Blend the apricots into the cheese mixture with a spoon and spoon the mixture evenly into 6 dessert dishes or stemmed dessert glasses.
  4. Refrigerate until serving. Makes six servings.
