Ingredients
  1. 1 eggplant
  2. 1 stick celery, chopped
  3. 1 can tomatoes, chopped
  4. 2 T green olives, chopped
  5. 1/2 onion, chopped
  6. 2 T capers
  7. 1 T vinegar
Instructions
  1. Put olive oil in pan.
  2. Debitter the eggplant (w salt) and cube.
  3. Add to pan along with celery, tomatoes, olives, onion, capers and vinegar.
  4. Cook and stir for 10-15 minutes. Let cool. Serve on crusty or toasted bread.
