Ingredients
  1. 1 cup flour
  2. 1 tsp baking powder
  3. 1/4 tsp salt
  4. 2 eggs
  5. 1 cup sugar
  6. 2 T butter
  7. 1/2 c hot milk
  8. t tsp vanilla
Instructions
  1. Sift together 1 cup flour, 1 tsp baking powder and 1/4 tsp salt. Set aside.
  2. Beat 2 eggs until thick and lemon colored, about 3 minutes at high speed on mixer.
  3. Gradually add 1 cup sugar, beating at medium speed for 5 minutes.
  4. By hand, quickly fold dry ingredients into egg mixture.
  5. Add 2 T butter to 1/2 cup hot milk.
  6. Stir into batter with 1 tsp vanilla.
  7. Blend well.
  8. Pour into wax paper lined 8x8x2 inch baking pan.
  9. Bake at 350 for 25-30 minutes, until browned on top.
  10. Cool in pan for 15 minutes, then remove from pan and remove waxed paper.
  11. Top with sweetened fruit and whipped cream.
Notes
  1. Helpful Hints: Great with strawberries.

Chewy, Butterless Chocolate Brownies

Ingredients
  1. 2 eggs
  2. 1 C of powdered sugar
  3. 1 tsp of vanilla
  4. 2 oz of unsweetened chocolate (melted)
  5. 1/2 C flour
  6. 1 C chopped pecans
Instructions
  1. Beat eggs until light.
  2. Beat in sugar, vanilla, and melted chocolate.
  3. By hand, stir in the flour and 3/4 C of the pecans.
  4. Spread in a greased 8 inch square pan.
  5. Sprinkle the remaining nuts over the batter, lightly pressing them in.
  6. Bake at 325 degrees for 20-25 minutes.
  7. Cut into bars while warm and sprinkle with powdered sugar or frost with a chocolate frosting if desired.

Peach Delight

Ingredients
  1. TOPPING: 1/2 pint of whipping cream (whipped)
  2. 1 Tbsp of powdered sugar
  3. 1 large can of sliced peaches (well drained)
  4. 3 egg whites
  5. 1/2 C of finely chopped pecans
  6. 1/4 tsp of baking soda
  7. 1 C of sugar
  8. 1/2 C of finely crushed soda crackers
  9. 1 tsp of vanilla
Instructions
  1. Beat egg whites stiff.
  2. Then fold in sugar, baking powder, vanilla, pecans, baking powder, and the soda crackers.
  3. Pour into a buttered 11x7 pan.
  4. Bake at 325 degrees for 30 minutes and then let cool.
TOPPING
  1. Add sugar to whipped cream and then fold in the peaches.
  2. Put this on top of the cracker mixture and refrigerate overnight.

Ingredients
  1. 1 C butter
  2. 1/2 C brown sugar
  3. 2 egg yolks
  4. 2 egg whites
  5. 2 C flour
  6. Chopped nuts
  7. Butter frosting
Instructions
  1. Mix the butter and the sugar together.
  2. Add the two egg yolks and then the flour.
  3. Form into small balls.
  4. Dip in slightly beaten egg whites and roll in finely chopped nuts.
  5. Place on ungreased cookie sheet.
  6. Push in center of cookie.
  7. Bake at 350 degrees for 8 minutes.
  8. Remove and press in center again.
  9. Bake 10 more minutes.
  10. When cool, fill centers with butter frosting.

Mountain Dew Cake

Ingredients
  1. 1 box Lemon Cake Mix
  2. 1 (3.4 oz) box instant Lemon Pudding
  3. 1 (12 oz) can of Mountain Dew Soda
  4. 3/4 cup vegetable oil
  5. 4 large eggs
Instructions
  1. Grease & flour bundt pan.
  2. Preheat oven to 350 degrees.
  3. Combine cake mix, pudding.
  4. Add soda pop, oil and eggs.
  5. Beat at medium speed until smooth.
  6. Pour in pan and bake 45-50 minutes.
  7. Let cool on rack.
Notes
  1. Helpful Hints: You can drizzle a glaze over warm cake, but this is really moist and does not need it. Very lemony.
