Pork Steak and Pineapple

  1. 2 lean pork steaks
  2. 1 (20 ounce) can chunk pineapple, drained (reserve juice)
  3. 1 cup uncooked rice (Minute Rice)
  4. 2 cups liquid (pineapple juice and water)
  5. Salt and pepper, if desired
  6. Brown sugar (approx. 1 tbsp)
  1. Cut pork steaks into strips, brown in large frying pan, then stir in pineapple, rice and liquid.
  2. Season with salt, pepper, and brown sugar.
  3. Cover and simmer about 30 minutes, or until rice is cooked and pork steaks are tender. Serves 2.
  1. Partially thawed frozen pork steaks are easier to cut into strips. For more color and nutrition, add raw slivered carrots, green pepper, or water chestnuts to pan before simmering.

  1. 2 cups Bisquick baking mix
  2. ½ tsp. salt
  3. ½ cup cold water
  4. 14 oz. bottle catsup
  5. 3 ½ oz. package sliced pepperoni
  6. 8 oz. shredded mozzarella cheese
  7. oregano leaves
  1. Stir baking mix, salt and water to a soft dough.
  2. Gently smooth dough into a ball on floured surface.
  3. Knead 5 times.
  4. Divide dough into 4 equal parts.
  5. Roll or pat each part into an 8 inch circle.
  6. Place circles on grill, 5 inches from medium coals.
  7. Cook 8 minutes.
  8. Turn and spread with catsup.
  9. Top with pepperoni, cheese and sprinkle with oregano.
  10. Cook an additional 12–15 minutes or until edges are brown.
