Hamburger and Cabbage Casserole

Ingredients
  1. 1 small head cabbage
  2. 1 lb. lean ground beef
  3. 1 small onion, diced
  4. 1/3 cup uncooked rice (Minute Rice)
  5. 1 can condensed tomato soup with 1 can of water
Instructions
  1. Chop cabbage and place in greased baking dish.
  2. Brown meat and onion (season to taste with pepper, garlic, seasoned salt, etc.), stir in rice.
  3. Pour on top of cabbage.
  4. Mix soup and water and pour over entire casserole mixture.
  5. Bake at 325 F for one hour.
  6. Add more water if casserole is too dry.

Ingredients
  1. 1 eggplant
  2. 1 stick celery, chopped
  3. 1 can tomatoes, chopped
  4. 2 T green olives, chopped
  5. 1/2 onion, chopped
  6. 2 T capers
  7. 1 T vinegar
Instructions
  1. Put olive oil in pan.
  2. Debitter the eggplant (w salt) and cube.
  3. Add to pan along with celery, tomatoes, olives, onion, capers and vinegar.
  4. Cook and stir for 10-15 minutes. Let cool. Serve on crusty or toasted bread.

Ingredients
  1. 1 Tube Refrigerated Crescent Rolls
  2. 24 Mini smoked sausage links
  3. 1/2 C. melted butter
  4. 1/2 C. chopped pecans
  5. 3 Tbsp Honey
  6. 3 Tbsp Brown Sugar
Instructions
  1. Unroll crescent dough and separate into triangles. Cut each triangle into 3 triangles.
  2. Place sausage on the long end and roll up tightly. Set aside.
  3. Combine remaining ingredients in 11x7x2 in baking dish.
  4. Arrange the sausage rolls seam side down in the butter sauce.
  5. Bake uncovered at 400° for 15-20 minutes.

Navy Bean Soup with Ham

Ingredients
  1. 2 C. Dried Nave Beans
  2. 10 C. Cold Water
  3. 1/2 of a ham slice, cubed
  4. 1 Large Garlic Clove, chopped
  5. 1 Large Onion, chopped
  6. 1 Medium Carrot, chopped
  7. 1 Medium Parsnip, chopped
  8. 4 Ribs celery, chopped
  9. 2 Bay Leaves
  10. 3/4 tsp Salt
  11. 1/2 tsp Coarse Ground Pepper
  12. 1 8 oz can Tomato Sauce
  13. 3/4 C. Instant Potato Flakes
Instructions
  1. In a soup pot or large dutch oven over high heat, bring the beans and water to a rapid boil.
  2. Cook 2 minutes, turn off heat, cover and let stand one hour.
  3. Add all remaining ingredients except tomato sauce and potato flakes, bring to a boil over medium heat.
  4. Cover, reduce heat and simmer for 1.5 hours, stirring occasionally. Remove bay leaves.
  5. Add tomato sauce and potato flakes, stir well and cook an additional 30 minutes, covered, and stirring often.

Ingredients
  1. 1 lb. Hamburger
  2. salt and pepper to taste
  3. 1 small Onion
  4. 1 can Mushroom or Celery Soup
  5. 2 C. Shredded Cabbage cooked and drained
  6. 1 can crescent rolls
  7. 1 C. Shredded Cheese
Instructions
  1. Brown hamburger and onion together the drain.
  2. Line an 8 or 9 inch square pan with 1/2 an of crescent rolls. Pinch edges together.
  3. Add hamburger cabbage mixture. Top with cheese and cover with the other half of crescents. Seal and pinch to sides of pan.
  4. Bake at 350° for 25-30 minutes.
  5. May make individual crescent pockets if desired.
