Strawberry Dessert

Ingredients
  1. 2 c. boiling water
  2. 2 3oz. pkg. strawberry Jell-O
  3. 2 10 oz. boxes of frozen straberries
  4. 1 medium can of crushed pineapple
  5. 3 bananas mashed
Instructions
  1. Partially thaw the strawberries, drain the crushed pineapple and mash the bananas.
  2. Dissolve Jell-O in 2 cups of boiling water.
  3. Add the partially thawed strawberries, drained pineapple and mashed bananas. Stir.
  4. Let set until firm (It will fit in a 9x13 baking dish).

Apricot Bars

Ingredients
  1. 1 c. brown sugar
  2. 1 1/2 c. oatmeal
  3. 1 tsp. baking powder
  4. 1 1/2 c. flour
  5. 3/4 c. butter
  6. 1 c. apricot jam
Instructions
  1. Combine brown sugar, oatmeal, baking powder and flour.
  2. Cut the butter into the mixture like pie crust.
  3. Line a 9 x 13 pan with 2/3 of the mix.
  4. Spread the jam on top and then cover it with the rest of the crumbs.
  5. Bake at 350 degrees for 35 minutes.

Lemon Delight

Ingredients
  1. 1 stick oleo
  2. 1 cup flour
  3. 1/2 cup nuts
  4. 8 oz. cream cheese
  5. 1 cup Cool Whilp (9oz)
  6. 3 cups milk
  7. 2 pkg. lemon instant pudding
  8. 1 cup powder sugar
Instructions
  1. Mix oleo, flour and nuts. Put it into a 9 x 13 pan.
  2. Bake at 375 degrees for 15 minutes.
  3. Mix cream cheese, powdered sugar and Cool Whip together.
  4. Put this layer on the crust and cool.
  5. Beat milk and pudding until thick.
  6. Put on top of the cream cheese mixture.
  7. Top with remaining Cool Whip.

Rhubarb Cake

Ingredients
  1. 1 egg
  2. 1 c sugar
  3. 1/2 c milk
  4. 1 T butter (melted)
  5. 1 c flour
  6. 1 tsp baking powder
  7. 2 c diced rhubarb
  8. 3/4 c sugar
  9. 1 T flour
Instructions
  1. Cream egg and 1 cup sugar.
  2. Sift 1 cup flour and baking powder.
  3. Alternately add 1/2 cup milk and sifted ingredients.
  4. Add melted butter and set aside. Place rhubarb in bottom of 8"x8" pan.
  5. Cover with mixture of 3/4 c sugar and 1 T flour.
  6. Pour cake batter over rhubarb.
  7. Bake 350 for 35 or 40 minutes until browned

Ingredients
  1. 1 cup flour
  2. 1/4 cup brown sugar
  3. 1/2 cup English Walnuts, chopped
  4. 1/2 cup margarine, melted
  5. 2 egg whites
  6. 2/3 cup sugar
  7. 1–10 oz. pkg strawberries
  8. 2 T. lemon juice
  9. 1 small container Cool Whip
Instructions
  1. Mix flour, brown sugar, walnuts and margarine in a 9x13 pan.
  2. Bake at 350 degrees for 20 minutes; cool.
  3. Combine egg whites, sugar, strawberries and lemon juice, then beat with mixer on high for 10 minutes.
  4. Fold in cool whip.
  5. Spoon over cooled crust.
  6. Freeze for 6 hours. Serve frozen.
