Brownie Bottom Pudding Pie

Ingredients
  1. 4 squares Bakers Semi-sweet baking chocolate
  2. 1/4 cup butter
  3. 3/4 cup sugar
  4. 2 eggs
  5. 1 tsp vanilla
  6. 1/2 cup flour
  7. 1/2 cup chopped nuts
  8. 2 1/2 cups cold milk
  9. 2 pkg (4 serving size) Jello chocolate flavor instant pie filling
  10. Thawed Cool Whip
Instructions
  1. Heat oven to 325 degrees for glass pie plate.
  2. Grease bottom and sides.
  3. Microwave chocolate and butter in large bowl on high 2 minutes.
  4. Stir until melted.
  5. Stir in sugar, eggs, vanilla, mix in flour, then nuts.
  6. Spread in pan.
  7. Bake 25-30 min.
  8. Cool.
  9. Pour milk into large bowl.
  10. Add pudding mixes.
  11. Beat with wire wisk 1 minute.
  12. Let stand 2 minutes.
  13. Spread over brownie pie.
  14. Top with whipped topping.
  15. Garnish with grated Bakers chocolate.
  16. Refrigerate until ready to serve.

Apricot-Ricotta Cheese Dessert

Ingredients
  1. 1-15 oz. can apricots
  2. 1-15 oz. container ricotta cheese
  3. 1/2 cup powdered sugar
  4. grated rind of one orange
  5. 1/2 teaspoon almond extract
  6. 1/2 teaspoon vanilla extract
Instructions
  1. Drain and rinse apricots and cut up with kitchen shears or knife.
  2. Combine remaining ingredients in a large bowl and stir well to mix.
  3. Blend the apricots into the cheese mixture with a spoon and spoon the mixture evenly into 6 dessert dishes or stemmed dessert glasses.
  4. Refrigerate until serving. Makes six servings.

  1. -1/2 c. oleo
  2. -1 1/2 c. sugar
  3. -2 eggs, slightly beaten
  4. -1 c. banana
  5. -1 teaspoon walnut extract
  6. -1 teaspoon lemon flavoring
  7. -1/2 teaspoon salt
  8. -1 c. flour
  9. -1 teaspoon baking soda
  10. -1/2 c. sour milk
  11. -3/4 c. crushed potato chips
Instructions
  1. Cream oleo and sugar, add slightly beaten eggs. Mix well.
  2. Add flavorings and mashed bananas. Mix well.
  3. Add dry ingredients alternately with sour milk.
  4. Bake at 350 degrees for 30 minutes until done.

Lamb Quesadillas

Ingredients
  1. -1 tablespoon olive oil
  2. -i medium red onion, cut into thin slivers
  3. -8 flour tortillas (7 1/2-inch)
  4. -1 cup part-skim ricotta cheese or white goat cheese
  5. -1 cup grated Monterey Jack cheese with jalapenos
  6. -1 cup finely chopped lamb leg or shoulder
  7. -4 large mushrooms, thinly sliced
  8. -2 green onions, thinly sliced
  9. -1 tablespoon finely chopped fresh mint or flat leaf parsley
Instructions
  1. In skillet, heat oil over low heat.
  2. Add the onion and cook for 6-8 minutes, stirring occasionally. Set aside.
  3. Place 4 tortilas on a work surface and sprinkle each with 2 tablespoons each of ricotta and jack cheese, making sure the cheese covers the surface evenly.
  4. Evenly layer lamb, onions, mushrooms, green onions, mint or parsley, and top with remaining cheeses. -Top with remaining tortillas.
  5. Heat a large skillet sprayed with nonstick cooking spray over medium heat.
  6. Using a large spatula, place a quesadilla in the skillet and cook, pressing down once, until the cheese melts and the torillas brown slightly; turn and lightly brown other side.
  7. Remove to a 250 degree oven to keep warm.
  8. Repeat with remaining quesadillas. -To serve: Cut each quesadilla into quarters.
  9. Serve with your favorite guacamole or salsa.

  1. 1 (16 oz) cans creamed corn
  2. 1 (6 oz) package corn muffin mix
  3. 2 eggs
  4. 1/2 c. margarine, melted
Instructions
  1. Mix all ingredients and bake in 8x8 greased casserole dish for 45 minutes at 350 degrees.
