Peach Delight

  1. TOPPING: 1/2 pint of whipping cream (whipped)
  2. 1 Tbsp of powdered sugar
  3. 1 large can of sliced peaches (well drained)
  4. 3 egg whites
  5. 1/2 C of finely chopped pecans
  6. 1/4 tsp of baking soda
  7. 1 C of sugar
  8. 1/2 C of finely crushed soda crackers
  9. 1 tsp of vanilla
  1. Beat egg whites stiff.
  2. Then fold in sugar, baking powder, vanilla, pecans, baking powder, and the soda crackers.
  3. Pour into a buttered 11x7 pan.
  4. Bake at 325 degrees for 30 minutes and then let cool.
  1. Add sugar to whipped cream and then fold in the peaches.
  2. Put this on top of the cracker mixture and refrigerate overnight.
