Ingredients
  1. 1 cup sifted flour
  2. 1/2 quick cooking rolled oats
  3. 1/2 cup brown sugar, firmly packed
  4. 1/2 cup butter
  5. 1 (1 lb) can pumpkin (2 cups)
  6. 1 (13 1/2 oz.) can evaporated milk
  7. 2 eggs
  8. 3/4 cup sugar
  9. 1/2 tsp. salt
  10. 1 tsp. cinnamon
  11. 1/2 tsp. ginger
  12. 1/4 tsp. cloves
  13. 1/2 cup chopped pecans
  14. 1/2 cup brown sugar, firmly packed
  15. 2 tbsp. butter
Instructions
  1. Combine flour, rolled oats, 1/2 cup brown sugar and 1/2 cup butter in mixing bowl.
  2. Mix until crumbly, using electric mixer on low speed.
  3. Press into ungreased 13x9x2 inch pan .
  4. Bake at 350 degrees for 15 minutes.
  5. Combine pumpkin, evaporated milk, eggs, sugar, salt and spices into a mixing bowl; beat well. Pour into crust.
  6. Bake at 350 degrees for 20 minutes.
  7. Combine pecans, 1/2 cup brown sugar and 2 tbsp butter; sprinkle over pumpkin filling.
  8. Return to oven and bake 15-20 minutes or until filling is set.
  9. Cool in pan and cut into 2-inch squares.
