Ingredients
  1. 1 egg
  2. 1 c sugar
  3. 1/2 c milk
  4. 1 T butter (melted)
  5. 1 c flour
  6. 1 tsp baking powder
  7. 2 c diced rhubarb
  8. 3/4 c sugar
  9. 1 T flour
Instructions
  1. Cream egg and 1 cup sugar.
  2. Sift 1 cup flour and baking powder.
  3. Alternately add 1/2 cup milk and sifted ingredients.
  4. Add melted butter and set aside. Place rhubarb in bottom of 8"x8" pan.
  5. Cover with mixture of 3/4 c sugar and 1 T flour.
  6. Pour cake batter over rhubarb.
  7. Bake 350 for 35 or 40 minutes until browned
