Rhubarb Swirl

  1. 3 C. Diced Rhubarb
  2. 3/4 C. Sugar
  3. 1 3oz box Strawberry Jello
  4. 1 3oz box Instant Vanilla Pudding
  5. 1/2 C. Cold Milk
  6. 8oz Cool Whip
  1. Mix rhubarb and sugar in saucepan. Let stand for 1 hour.
  2. Then over low heat simmer til rhubarb is tender.
  3. Remove from heat and stir in jello. Stir hello til dissolved and syrupy.
  4. Prepare the pudding with milk and beat until thick.
  5. Add cool whip, blend in rhubarb and lightly swirl. Refrigerate several hours or overnight.
